WHere is an easy take on a beverage found on the seasonal cocktail list. Designed as a batch pre-mixed which is loaded full of essence of the holiday season, which makes it excellent for your holiday party. Reserve the remaining syrup to use in brunch beverages, sweets, or for more rounds of bikinis.
Bikini
Yields 10 servings
Ingredients for the Clementine Cordial (yields 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar
Ingredients for the Cocktail (produces 850ml, to serve 10)
400ml premium vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, to finish
Instructions
To prepare the Citrus Syrup: Put the listed items in a saucepan, bring to a light boil, agitating so the sugar melts. After that, turn off the heat and let it to reach room temperature entirely. Transfer into an clean bottle, close it keeping it in the refrigerator, it will last for about a month.
To make Batch Mix: Mix all the liquids in a sizeable container, leave to sit for one hour, then filter it , ideally through cheesecloth, to ensure it's completely strained.
To serve: Measure 85ml of the batch mix into a cocktail shaker filled with ice, and agitate gently for about 60 seconds to cool it down. Strain into a chilled martini glass or similar, decorate with a few cranberries adding the final touch with a quick spritz with the mandarin essence over the top.
